What does a chorus pedal do?

A chorus pedal repeats what you play at very close intervals to make it sound like multiple guitars are playing . When you increase the depth, it increases the intensity of the effect. When you adjust the rate (or delay time) it makes the repeats occur closer together or farther apart.
